Cheesecake is a very delicious desert that is rich
and creamy. This desert only consists of a few ingredients and you don't need
an oven to bake it. It is a little time consuming, although very simple and can
be made by anyone.
The ingredients you will need are:
250g of any semi-sweet biscuits
150g of unsalted butter (at room temperature)
3 sheets of gelatin
¼ cup hot water
500g of cream cheese
½ a lemon
⅔ cups of
sugar
2 tsp of vanilla extract
250g of thick cream (wiped)
Step 1: Prepare a 20cm round (base) spring form pan
with parchment paper for easy removal.
Step 2: Grab the biscuits and crush them into crumb-sized
pieces, using a food processor or by hand. Mix in the unsalted butter. Consistency
should resemble wet sand. Place mixture into pan, spread evenly on the bottom
to form the base of the cheesecake. Refrigerate for 10 minutes, or until firm.
Step 3: Combine the gelatin sheets and the water
and melt over a double boiler. Stir until melted and liquefied. Set aside to
cool slightly.
Step 4: Combine the cream cheese and the sugar and
mix well with an electric whisk, or with a normal whisk by hand. Once smooth
and creamy, add the zest of half a lemon, as well as the juice. Add the vanilla
extract and mix until fully incorporated.
Step 5: Whip the cream and stir into the cream
cheese mixture. Add the gelatin and mix until fully incorporated. Once combined
place on top of the biscuit base and spread evenly.
Step 6: Refrigerate for 3-4 hours or until firm. Finally,
decorate with some fresh strawberries or the fruit of your choice and serve.
